VEGAN PIZZA POCKETS ARE THE BEST SNACK FOOD
One of my favorite after school snacks when I was in high school, many decades ago, were frozen pizza rolls that you could pop in the oven for 15 minutes and dip in marinara sauce.
Were they healthy? NO! Did I care? NO!
I was a skinny teenager who didn’t think about my weight or what I put into my body. Those were different times.
Fast forward to Alex’s teen years, and mama grew up and become the food police.
If there was hydrogenated oil or high-fructose corn syrup in the ingredients list, it didn’t get past the front door.
However, Alex had LOTS of friends in high school, and even though I wouldn’t buy them, she ate her fair share at other kid’s homes.
Of course, she was as fond of them as I was.
We don’t want any kid, or adult for that matter, to miss out on the deliciousness of pizza bites, so we created this easy recipe for you.
WHAT INGREDIENTS ARE IN VEGGIE PIZZA ROLLS?
This is one simple appetizer recipe, y’all!
Here are the three, or four, ingredients that you’ll need.
HOMEMADE VEGAN PASTA – Make our simple 3 ingredient pasta dough recipe for the pizza pockets.
4 INGREDIENT PIZZA SAUCE – Make our healthy vegan pizza sauce or you can buy one.
Vegan ricotta and mozzarella cheese – We suggest using Kite Hill Almond Ricotta and Miyoko’s Mozz.
Shredded jackfruit - this gives the pizza rolls a great meaty and chewy center (optional)
Plant-based pepperoni – This is completely optional. We prefer simple cheese and sauce.
HOW DO YOU MAKE PIZZA ROLLS IN THE OVEN?
STEP ONE
Make our simple homemade pasta dough. Click here to get the recipe.
Roll it into one large rectangle.
STEP TWO
Make our easy pizza sauce. We recommend making a big batch and freezing it so you always have some on hand.
STEP THREE
One inch from the edge of one side of the dough, evenly space several dollops of vegan ricotta on the dough, then a spoonful of pizza sauce, and finish with a sprinkle of shredded vegan mozzarella.
Feel free to add shredded jackfruit and/or vegan pepperoni if you want.
STEP FOUR
Fold the end of the dough over the filling and use the back of the blade of a sharp knife to press down between each filling to create the rolls. Then cut the rolls out and press and fold the ends together.
STEP FIVE
Lightly brush a thin layer of olive oil (optional) on top of each roll and bake on a baking sheet for approximately 5 to 7 minutes per side, or until the rolls are golden brown and crispy.
Dip the vegan pizza bites in marinara and enjoy!
CAN I USE VEGAN PIZZA DOUGH TO MAKE THIS HEALTHY PIZZA ROLLS RECIPE?
You can make our homemade pizza dough recipe, but be aware that the dough will be much chewier than crispy.
HOW DO I STORE HOMEMADE VEGAN PIZZA ROLLS?
Freeze them in a freezer safe container and reheat in the oven.

Crispy Vegan Pizza Rolls
Equipment
- Oven
Ingredients
- 1 batch of pasta dough see recipe link below (See Note).
- 2 cups pizza sauce see recipe link below or purchase your favorite brand.
- 2 cups vegan ricotta see recipe link below or purchase. We prefer Kite Hill ricotta.
- 1 cup vegan mozzarella shredded, we prefer Miyoko’s (shred with box shreddeor Violife.
- Vegan pepperoni optional
- Olive oil optional
Instructions
- Preheat oven to 375°F (190°C)
- Roll the pasta dough into a thin (about 1/8-1/4 inch thic12-inch long x 6-inch wide rectangle.
- Leave a 1-inch border on the edge of one side of the dough and make a line of vegan ricotta, leaving space between each dollop, along the length of the dough.
- Top each dollop of ricotta with the pizza sauce and then sprinkle with the vegan mozzarella.
- Fold the dough over the line of cheese and sauce and use the back of a knife to press the dough down between each dollop.
- Cut the pizza rolls out and press and fold the edges. Place each pizza roll on a baking sheet and brush with a thin layer of olive oil (optional).
- Bake for 5 to 7 minutes per side, or until golden brown and crispy.
- Dip in warm pizza sauce.
- Enjoy!
