We've created a creamy, cheesy, gooey and delicious fondue that's perfect for a romantic dinner for two or a fun and creative party with your favorite family and friends.
The last time I enjoyed fondue was at a cozy restaurant at the top of a mountain in Colorado. My husband (a former competitive slalom and GS racer) and I used to take the kids skiing in CO every winter from the time they could stand on skis.
His dream was that they would love skiing as much as he did. His dream came true, they loved skiing, and they learned to love snowboarding. Now they’re really good at both.
Winter, skiing, romance, family, fondue, that’s the order of this romantic and delicious dish.
I met my husband in the winter on a ski hill. I was having fun with my friends, he was training with his team. We were in the lift line laughing and being silly teenage girls. He tapped me on the butt with his ski pole. Silly seventeen-year-old boy! We fell in love, got married in our mid-twenties, had kids, took them skiing, and introduced them to fondue.
Creating this vegan cashew cheese fondue brought back a flood gate of good memories. Like I’ve said before, food is an emotional thing. Our mission is to create recipes that allow you to be vegan AND keep eating your memories.
Now that you know my fondue story, let’s make some, and then you can tell me your fondue story in the comments.
HOW TO MAKE THE CREAMIEST VEGAN FONDUE
First – Pour boiling water over raw cashews and refrigerate overnight. We found that even with our high-powered blenders (Blendtec and Vitamix) we got the creamiest fondue if we let the nuts soak for at least 6 hours.
Second – Drain and rinse the cashews and put them in your blender along with the rest of the ingredients and blend for about two minutes, or until you have a perfectly creamy cheese dip. There shouldn’t be any solid pieces of nuts. If you can detect any solids then keep blending.
Third – Scrape the cheesy mixture into the fondue pot and light the sterno to keep it warm. Sprinkle a bit of paprika on top to make it pretty.
We love to dip cubes of rosemary bread, apple slices, veggies, and pretzels in our fondue. Tell us what you like to dip in yours.

Vegan Fondue
Equipment
- 1 pot
- 1 stove
- 1 Blender
- 1 fondue pot
Ingredients
- 2 cups raw cashews
- ½ cup vegan cream cheese
- 1 cooked potato peeled
- 1 garlic clove
- 1 cup water
- ⅓ cup nutritional yeast
- 1 tablespoon white wine vinegar
- 2 tablespoon white miso
- 1 tablespoon lemon juice
- Sea salt to taste
- Paprika to garnish optional
DIPPING OPTIONS
- Cubed bread
- Apple slices
- Raw vegetables cauliflower, broccoli, bell pepper, carrots….
- Pretzels
Instructions
- In a saucepan, cover the cashews in water and boil for 8-10 minutes, or until soft and puffy.
- Drain and rinse the cashews and put in a high-powered blender with the remaining ingredients and blend on a high speed for approximately 2 minutes, or until it’s smooth and creamy. You shouldn’t detect any solid pieces. If you taste solid nuts then keep blending.

Hi Lori, You can use any kind of potato, Russet, Idaho, and Yukon Gold have the most starch, so those work great.

Thank you so much! Great recipe! I retired it tonight for Christmas Eve and it was a big hit! I used green apple and all kinds of veggies it was awesome! I only used about 1.5 cups cashews because my blender is too small and it still turned out fabulous!

Hi Robyn! The cream cheese gives the recipe its tanginess, it doesn't taste like cream cheese. You could substitute vegan Greek yogurt for a similar flavor.
