Happy Hour: Sparkling Margaritas & Basic Guacamole
Sparkling “Skinny” Margarita
Let’s be real. There is no such thing as a skinny cocktail. If your goal is to be skinny then don’t drink your calories. However, if your goal is to enjoy a low calorie libation that is refreshingly effervescent (I LOVE that word), packs a little punch, and won’t make you feel too guilty, then this is your cocktail.
Admittedly, I’m not a mixologist, but I know what I like to drink. After a few failures (too much of this, not enough of that), and a lot of wasted limes, pun intended, I finally got this recipe right.
You may not like it if you enjoy a margarita that’s heavy on tequila and thick and syrupy. But, if you like a light, bubbly, refreshing concoction that won’t turn your happy hour upside down, then I think you’ll enjoy this.
1 cup of lime flavored sparkling water
1 cap full of orange liquor (Cointreau is vegan friendly)
½ of a shot of tequila (Check www.Barnivore.com for vegan tequila)
1/8 teaspoon of vegan sugar
2 cups crushed ice
Juice the limes. I use an electric juicer, but a hand held juicer works just as well.
Pour a fine layer of salt on a plate. Rub the rim of the glass with lime and then put the rim on the salt until it sticks to the glass. Put a slice of lime on the glass to make it pretty.
Put the ice in the martini shaker and add the lime juice, water, tequila, orange liquor, and sugar. Shake well and pour into the glass.
Drink responsibly and never drive or text after consuming alcohol.
- 2 avocados
- 1/2 lime juiced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 roma tomato
- 1/4 cup chopped red onion
Cut and scoop out the avocado meat and mash it
Dice your roma tomato and add it to the avocado
Squeeze the lime juice into the bowl
Add the diced red onion
Add salt and pepper
Mix and enjoy!
