Rosemary and Chive Home Fries
This is such an easy recipe, it requires very little prep work. All you need to do is clean the potatoes, slice, and cover them with olive oil, dried rosemary, and salt and pepper. Then bake them for a half hour and sprinkle minced chives on them. Easy peasy!
The result, savory, delicious, home baked fries that are better for you than the deep fried, over salted, fast food variety.
The rosemary and chives adds an elegance to the taste and appearance. That’s right, elegant French fries, who would have thought?
Potatoes – You be the judge as to how many you’ll need. It depends on how many you’re feeding.
1 tbsp. olive oil
1 tsp. ground rosemary
1 tbsp. fresh chives minced
Salt and pepper to taste
Preheat the oven to 400°
Scrub the potatoes and dry them. Slice into wedges and put them in a bowl with the olive oil, rosemary, salt, and pepper. Stir the potatoes until their completely coated with the olive oil and spices.
Spread the potatoes evenly on a cookie sheet. Line with parchment paper to make clean up easier.
Roast for 15 minutes and then flip them. Roast another 15 minutes. They are done when they start to brown and look puffy.
Sprinkle the chives on the fries as soon as you take them out of the oven. Let cool for five minutes.
To wrap them in parchment paper, tear off a square of the paper and roll into a cone. fold the bottom of the cone over and tie with kitchen twine or ribbon. If the fries are short, stuff a paper towel in the bottom of the cone so the fries stick out.
