If the Thanksgiving holiday has left you with a little extra baggage around the middle and a few leftover sweet potatoes, fret not, it's just a tiny set back, and I know exactly what to do with those pounds and potatoes. Make this antioxidant and vitamin loaded vegan orange sweet potato smoothie and get outside for a brisk walk or run. Problems solved.
Leftovers are awesome, until they're not. You know what I mean. Those sweet potatoes, one of your favorite foods in the world, are the perfect snack, until you’ve had three in a two days. After a while you just can’t dig your fork into another reheated potato without feeling less than enthusiastic. That’s when you need to shake things up a bit, or in this case, blend things up.
This thick, rich, creamy dreamy orange sweet potato smoothie isn’t just orange because of the sweet potatoes, it’s orange because there are two oranges in the smoothie. The sweet and tangy oranges brighten and lighten up the sweet potato to make one of my favorite drinks ever!
All you’ll need to make this is a high powered blender, like my beloved Blendtec Blender, a baked sweet potato, two small oranges (clementine work great), some almond milk, one date, fresh ginger, and cinnamon. Whip up the ingredients with three ice cubes and in two minutes time you’ll be sipping—or slurping if you’re like me—on the most delicious smoothie this side of Lake Michigan.
And not only is this orange sweet potato scrumptious, it’s so good for you. The sweet potato is loaded with beta-carotene, vitamin A and C, manganese, copper, and so much more. And of course the oranges are also going to give you a vitamin C boost, fiber, and folate. It might taste like forbidden fruit, but it’s far from it. It’s a nutritional powerhouse.

Vegan Orange Sweet Potato Smoothie
Equipment
- 1 Blender
Ingredients
- 1 cup of unsweetened almond milk I use Silk brand
- 2 small oranges clementine oranges work well – peeled and seeds removed
- 1 baked medium sweet potato approximately one cup – do not use the peel
- ⅛ teaspoon of fresh ginger – minced
- 1 medjool date – pitted
- ⅛ teaspoon of ground cinnamon
- 3 ice cubes
Instructions
- Blend all of the ingredients in a high powered blender until smooth and creamy.
- Enjoy!
- NOTE: If you like your smoothie thinner add more almond milk. If you don’t like fresh ginger, leave it out. Make this your own.
