It’s not always easy to find vegan mozzarella in the grocery store, especially if you live in a rural area.
The good news is, avocados make an excellent substitute for cheese.
It’s creamy, has a mild flavor, and pairs well with tomato, basil, and balsamic vinegar.
Our vegan caprese skewers, also called, kabobs, is an easy plant-based appetizer that our friends and family adore.
They’re a great option for whenever you need a quick and easy appetizer, or you can make a vegan caprese salad with the ingredients if you’re not into kabobs.
What Ingredients Will You Need?
You’ll only need four simple ingredients that you should be able to find at any grocery store.
- Cherry tomatoes
- Avocado
- Fresh Basil
- Balsamic vinegar
Once you have those basic ingredients, you’re ready to make these easy skewers.
How to Make Them
STEP ONE
The most labor-intensive part of this recipe is cubing the avocado.
Slice the avocado in half, lengthwise, and pull apart.
Remove the avocado pit and then carefully peel the skin off.
Place the avocado flat side down and slice lengthwise and then in the other direction.
You should end up with cubed avocado.
For best results, make sure they’re about a half of an inch in size so they stay on the cocktail skewers.
STEP TWO
Now it’s time to put the skewers together.
Stick a piece of cubed avocado onto the skewer.
Fold a basil leaf in half and stick it through the skewer.
Stick a tomato through the toothpick/skewer from the stem end of the tomato.
Feel free to add more layers if you have room.
STEP THREE
Arrange on a platter and drizzle balsamic vinegar over the avocado caprese skewers and serve.
How to Store
Cover and store in the refrigerator for a few hours.
Avocados tend to brown quickly, so assemble as close to serving time as possible.
