Can you tell I’m in need of some time off?
This week has been insane. I’m taking an online photography course and there is daily homework. What? That, in addition to creating recipes, photographing what I cook, writing, and all of the other stuff that life serves up, is making me a little weary.
That’s why today’s happy hour is simple and fresh. No mess, no major prepping, and it matches the beauty of the day. Sunny and 75°. The weather doesn’t get any better than this, so I’m not wasting any time indoors. It’s all about relaxing and enjoying what’s left of the season.
They are what’s what right now. Fresh, sweet, juicy fruit that bursts in your mouth and reminds you why you need to eat as many as possible while they’re at their peak. Now pair them with creamy avocado and a leaf of peppery basil (preferably from your garden). Once you gather those three beautiful foods together, dip them in some buttery olive oil blended with a splash of champagne vinegar and a sprinkle of chili flakes to add a little heat.
Don’t stop there. You need something to quench the fire from the pepper flakes. I have the perfect solution. Think Meyer lemons, crisp white wine, a nip of vodka, and sparkling water. Summer doesn’t get any better than this.
