This refreshing lemon slushy is made with three simple ingredients and it's so delicious! Make it for breakfast, a snack, or sneak a little something strong in it for an icy summer cocktail.
As usual, Chicago skipped spring and went from winter to summer in one week. I’m not complaining. Bring on the heat and the sunshine, because this pasty white, vitamin D deficient woman needs it! LOL!
Seriously, we went from snow one weekend to 80-degree temperatures the next. We will be getting back to real spring weather in a few days (I’m not going to complain, as long as it stays in the 60s), but in the meantime, you can find me sitting on my patio with my furry companions, my laptop, and a frosty mason jar filled with a delicious homemade lemon icy.
All you need to make this is three (excluding water and ice) simple ingredients. Some water, ice, frozen pineapple, hemp seed and a thick slice of lemon, rind and all.

You can omit the hemp hearts if you want, but I wouldn’t, because they offer protein and omegas.
This easy lemon smoothie recipe is so perfect now that it’s getting warmer outside. The bright and refreshing taste of lemon, along with it’s tart bite, is an excellent summer beverage. I mean, you can’t ask for anything better than delicious and healthy.
HOW TO MAKE A FROZEN LEMON DRINK THAT'S HEALTHY
If you have a blender and you know how to use it, you can make this delicious frozen lemon ice.
First – Add the water and ice, frozen pineapple, hemp seed and lemon slice to the blender.
Second – Blend the ingredients on a high setting until it’s smooth.
Third – Pour it into a frosty glass, find a comfortable place to sit, and sip away.
Now, if it’s five-o-clock (it always is somewhere) and you’re in the mood for an adult beverage, add a little rum or vodka and blend it up. Pour it in large wine glasses and stick a slice of lemon on the rim.

Lemon Slushy
Ingredients
- 1 ½ cups water
- 1 cup ice
- 2 cups frozen pineapple
- 1 tablespoon hemp hearts optional
- 1 lemon slice about 1-inch thick with the peel on
Instructions
- Put all of the ingredients in a blender and blend on a high speed until smooth and you can’t detect pieces of the lemon or pineapple.

Yep, and because you don't take the peel off, it's really all you need. It's not lemonade, it shouldn't make your mouth pucker up, it's just refreshing and delcious.

I'm not crazy about hemp seeds, but I love the idea about having something like that in my slushy. How about buckwheat? Flax? Chia?

Hi Kate! I find flax seed to have a stronger flavor than hemp seeds, that's why I use hemp. You can certainly try it and see if you like the taste. Chia seeds will change the texture so I wouldn't use them. 🙂

Yes, I see your point. Also, flax has that nutty finish that, maybe, is not the best option with the lemony taste.
But, as you say - I have to try them for the taste. So, guess how I'll be spending my Sunday! SSSSSSlushieeeeees with all kinds of seeds! 🙂
