Quinoa Cherry Berry Breakfast Bowl

Ingredients

  • 1 cup of quinoa – rinse in a colander until the soapy film is completely rinsed away
  • 1 and 1/2 cups of water
  • 1 and 1/2 cups of fresh cherries – pitted and chopped
  • 1 cup of blueberries
  • 1 cup of almond milk
  • 1 tablespoon of pure maple syrup
  • 1 teaspoon of cinnamon
  • 1 pinch of salt approximately an 1/8 of a teaspoon
  • 2 tablespoons of hulled hemp seeds
  • 1 cup of soaked almonds – soak for at least four hours or overnight. Drain them and pat dry.
  • 1/2 cup of unsweetened coconut flakes

Instructions

  • In a medium sauce pan bring the water and quinoa to a bowl, cover, and reduce the heat to simmer. Cook for 15 minutes or until the water is completely absorbed. Remove from the heat and let sit with the cover on for ten minutes. Remove the cover and fluff the quinoa and put it in a medium bowl to cool.
  • Stir the almond milk, maple syrup, cinnamon, and salt together until combined and pour into the bowl with the quinoa and stir until fully combined. Fold in the almonds, hemp seeds, cherries, blueberries, and coconut.
