Easy Vegan Lettuce Wraps

Quick and easy vegan lettuce wraps with an Asian twist. Full of flavor and delicious!

Ingredients

  • 1 tablespoon vegetable oil see note.
  • 1 large red onion - slivered
  • 2 tablespoon fresh ginger – peeled and minced
  • ¼ cup basil leaves – minced
  • ½ cup roasted peanuts – chopped
  • 1 lime – peeled and thinly sliced into wedges
  • ½ lime for juicing
  • 1 ¼ tablespoon Chinese Five Spice – In the spice section of the supermarket
  • 2 teaspoon toasted sesame oil
  • 15 ounce extra firm tofu – pressed and chopped into small pieces
  • 6 large lettuce leaves – washed and patted dry see note
  • Salt to taste
  • 4 tablespoon soy sauce
  • Thinly sliced and peeled lime wedges optional

Instructions

  • Wash and dry the lettuce leaves. Set aside.
  • Prepare the onion, ginger, basil, peanuts, lime, and tofu.
  • Heat the 1 tablespoon vegetable oil in a sauté pan on high heat. When the oil is hot add the slivered onions and cook until they start to look translucent. Add the 2 tablespoon ginger, ½ cup peanuts,4 tablespoon soy sauce, and 15 oz chopped tofu. Stir well. Add the 1 ¼ tablespoon Chinese five spice and salt to taste. Stir until combined. The tofu should look slightly brown. Add the ¼ cup basil, 2 teaspoon sesame oil, and squeeze the juice from the ½ lime over the tofu mixture.. Stir constantly until the tofu is done, approximately five more minutes.
  • Let the tofu cool for a few minutes. Spoon into leaves, add the lime wedges, drizzle some soy sauce over the top,

Notes

  • NUTRITION DISCLAIMER
  • Do not cook with the sesame oil, it burns easily and can taste quite bitter. 
  • We prefer Bibb, Iceberg, or Romaine lettuce for wraps. 
  • If you like really spicy food, you can add a teaspoon of hot pepper flakes to the mixture. If you don’t like the lime wedges, squeeze a little extra juice on the wrap, or omit it all together. This is your wrap, do what you like.
