Preheat the oven to 400°F
Put the almonds on a large rimmed baking sheet and roast for 2 to 3 minutes or until they’re golden brown. Watch them carefully so they don’t burn. Remove from oven and let them cool.
Put the almonds in your food processor or high powered blender. Add the cacao or cocoa powder, dates, and sea salt.
Grind the nuts until they’re smooth and creamy.
If your dates are dry, soak them in water for 20 minutes to plump them up so they'll blend better.
Store in an airtight container in the refrigerator for up to 10 days.
