Vegan Hummus, Ricotta, Kale, and Spinach Wrap

  • 1 eight inch tortilla
  • 3 tablespoons of hummus
  • 2 tablespoons of vegan ricotta or cheese of choice
  • 1 small tomato – seeded and sliced
  • 1 cup of baby spinach leaves
  • ½ cup of chopped kale


  • Lay the tortilla on a flat surface and spread the hummus on the tortilla, leaving a one inch clean border.
  • Sprinkle the cheese over the hummus.
  • Layer the tomato slices, spinach, and kale over the hummus and cheese.
  • Add salt and pepper if desired.
  • Fold the sides of the tortilla and roll the end that’s closest to your body until the tortilla is rolled up into a wrap.
  • Use a serrated edge knife for easier slicing.
  • Enjoy!
