Mediterranean Sandwich with Oil-Free Spicy Hummus

The hummus in this Mediterranean sandwich is ignited with hot sriracha and then cooled with cucumber. The perfect meal for a hot summer day.

Equipment

  • 1 food processor

Ingredients

  • For the hummus:
  • 1 16 ounce can of garbanzo beans – drained and rinsed well
  • 4 cucumber slices approximately ¼ inch thick
  • 3 teaspoons of sriracha add 1 teaspoon at a time and taste before adding the next to avoid making it too hot
  • 1 tablespoon of lime juice
  • 4 basil leaves
  • ½ teaspoon of ground sea salt
  • Ground black pepper to taste
  • For the sandwich:
  • 2 slices of whole grain bread - toasted
  • 3 slices of cucumber approximately ¼ inch thick
  • 1 carrot – peeled and shredded
  • 3 to 4 baby spinach leaves
  • 2 slices of tomato approximately ¼ inch thick

Instructions

  • For the hummus:
  • Add the garbanzo beans, cucumber slices, 1 teaspoon of sriracha (taste after you blend all of the ingredients then add more if desired), lime juice, basil leaves, sea salt, and pepper and blend in a food processor until smooth and creamy.
  • For the sandwich:
  • Spread ½ of a cup of hummus on a piece of toast, then layer with the cucumber slices, tomato, carrot, and spinach. Top with the second piece of toast and cut in half.
  • Enjoy!

Notes

Store covered in the refrigerator for up to 2 days.
