Vegetable & Herb Chopped Salad & a Treeline Cheese Review

A healthy, simple, and delicious chopped salad filled with red leaf lettuce, spinach, basil, and veggies, then topped with a creamy herb-garlic dressing and vegan cheese crumbles.

Ingredients

  • 4 cups of chopped red leaf lettuce
  • 2 cups of chopped baby spinach
  • ¼ cup of chopped fresh basil
  • ¼ cup of chopped chives
  • 1 orange yellow, or red bell pepper – seeded and finely diced
  • 1 cup of cherry tomatoes – finely diced
  • 1 cup of Kalamata olives – pitted and finely chopped
  • ¼ of the container of Treeline Herb-Garlic French-Style cheese
  • Dressing
  • ¼ of the container of Treeline Herb-Garlic French-Style cheese
  • ¼ cup of filtered water

Instructions

  • Prepare the vegetable and herbs as directed above and put in a large bowl.
  • From the cheese container, take ¼ of the cheese and put in a blender or use an immersion blender to blend the cheese and water for the dressing. Blend until it’s smooth and creamy.
  • Pour the dressing over the salad and toss until it’s completely coated.
  • Crumble ¼ of the container of cheese over the salad.
  • Enjoy!
