Ingredients

  • 6 cups of baby spinach
  • 1 cup of fresh corn kernels
  • ½ cup of chopped green onions
  • 2 cups of sliced cherry tomatoes
  • Dressing
  • 1 avocado – pitted and peeled
  • ½ cup of water
  • 3 tablespoons of white wine vinegar
  • 1 cup of cilantro
  • Juice of 2 limes
  • ½ teaspoon of chili powder
  • Pepper to taste

Instructions

  • Put the salad fixings in a large bowl. Put the dressing ingredients in a blender and blend on a high speed until smooth and creamy. Dress the salad with one third of the dressing (store the rest for later in the refrigerator or use it as a dipping sauce) and toss well.
