Vegan Creole Fried Rice

Ingredients

  • 1 tablespoon of avocado oil
  • 1 cup Jasmine rice 1 and ½ cups of vegetable broth
  • 2 stalks of celery – diced
  • 1 white onion – chopped
  • 1 red or yellow bell pepper – seeded and diced for more color use ½ of a red and ½ of a yellow pepper
  • 3 cups of frozen sliced okra
  • 3 cloves of garlic - minced
  • 1 15 ounce can of red beans – drained and rinsed well
  • 1 teaspoon of paprika
  • 1 teaspoon of crushed dried thyme
  • 1 teaspoon of crushed dried oregano
  • ¼ or ½ teaspoon of cayenne pepper start with ¼ and add more if desired
  • ½ teaspoon of ground black pepper
  • 1 teaspoon of salt

Instructions

  • In a medium sauce pan bring the rice and vegetable broth to a boil, cover and reduce the heat to simmer. Cook for 15 minutes. Remove from heat and keep covered for 10 minutes.
  • Heat the oil on medium high heat in a large skillet. When the oil is hot add the onions and celery and cook until the onion begins to look translucent. Add the bell pepper, okra, beans, and spices and cook for 15 minutes. Add the garlic and rice and stir well to coat the rice with the spices.
