1red or yellow bell pepper – seeded and dicedfor more color use ½ of a red and ½ of a yellow pepper
3cupsof frozen sliced okra
3clovesof garlic - minced
1 15ouncecan of red beans – drained and rinsed well
1teaspoonof paprika
1teaspoonof crushed dried thyme
1teaspoonof crushed dried oregano
¼or ½ teaspoon of cayenne pepperstart with ¼ and add more if desired
½teaspoonof ground black pepper
1teaspoonof salt

Instructions
In a medium sauce pan bring the rice and vegetable broth to a boil, cover and reduce the heat to simmer. Cook for 15 minutes. Remove from heat and keep covered for 10 minutes.
Heat the oil on medium high heat in a large skillet. When the oil is hot add the onions and celery and cook until the onion begins to look translucent. Add the bell pepper, okra, beans, and spices and cook for 15 minutes. Add the garlic and rice and stir well to coat the rice with the spices.
