Easy Vegan Breakfast Sandwich

Ingredients

  • 1 vegan breakfast sausage patty Link to recipe in the instructions.
  • 6 tablespoon vegan egg we recommend JUST egg or Follow Your Heart (SEE NOTE)
  • 1 slice of vegan cheese you can also use shredded vegan cheese
  • 1 English muffin sliced in half and toasted
  • OPTIONAL TOPPINGS
  • Hot sauce
  • Mashed avocado
  • Salsa
  • Sliced tomato and greens
  • Hash browns
  • Tofu bacon SEE NOTE

Instructions

  • Make our sausage patties (click here for recipe)or buy ready-made vegan patties.
  • We recommend making a batch or two of our breakfast patties and keep them in your freezer. Reheat and build your sandwich.
  • Pour 6 tablespoon of JUST egg in a hot (medium-high) non-stick pan and use a spatula to push the edges of the egg toward the center so it forms the shape of a circle. Cook until it’s firm all of the way through. Approximately 4 minutes.
  • Place a slice of your favorite vegan cheese on top of the egg or sprinkle your favorite shredded vegan cheese evenly over the top. Cover the pan and let it melt. Approximately 1 minute.
  • Toast an English muffin while you cook the vegan egg.
  • Place the sausage patty on the bottom piece of the English muffin, then put the egg and cheese on the sausage, top with your favorite hot sauce.

If you use Follow Your Heart Vegan Egg, follow the instructions for 2 eggs. If you don’t want to use a vegan egg to make this, you can use tofu to substitute the egg.
