Ingredients

  • 1 cup of rolled oats use gluten-free if necessary
  • 1 tablespoon ground flax seed
  • ½ cup of natural peanut butter
  • 2 medjool dates – pitted if the dates are dry, soak in water for twenty minutes to plump up
  • A pinch of ground sea salt
  • 1 cup of vegan (I use Enjoy Life branchocolate chips – melted

Instructions

  • Grind the oats in a food processor until it resembles flour. Add the flax seed and process until blended. Add the peanut butter, dates, and sea salt and process until it forms a ball.
  • Melt the chocolate chips until the chocolate is thin and pourable.
  • Roll the dough into one inch balls and cover with the chocolate. Freeze for thirty minutes.
  • Keep refrigerated in an airtight container for up to one week.
  • Enjoy!
