CUBAN BLACK BEAN DIP WITH ROASTED CORN, APPLES & KALE

This slightly spicy, savory, and sweet Cuban black bean dip is so delicious that you'll never guess how easy it is to make or  how healthy it is.

Ingredients

  • 1 14 ounce tub of Better Beans Cuban black beans
  • 2 cups of frozen corn
  • 1 medium apple – cored and finely chopped
  • 3 green onions – finely chopped
  • 2 cups of finely chopped red kale you can use any type of kale
  • Squeeze of lime juice from 1/2 of a lime

Instructions

  • Dry roast the corn in an iron skillet on medium high heat until it begins to brown. Remove from heat and let cool.
  • n a large bowl mix the beans, corn, apple, green onions, kale, and lime juice. Mix well.
  • Enjoy!
