Vegan Monte Cristo

This easy vegan ham and cheese recipe is dipped in a spicy egg wash then grilled in butter. It's like a French toast, ham & cheese sandwich!

Ingredients

  • ½ cup of vegan egg we suggest using JUST egg for this. See Note
  • ¼ teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 slices of bread we prefer sourdough for this sandwich
  • 2 tablespoon stone ground mustard
  • 2 to 3 pieces of thinly sliced vegan ham
  • 1 slice vegan cheese See Note
  • 1 tablespoon vegan butter or olive oil

Instructions

  • In a bowl that’s large enough for the bread, whisk the ½ cup of vegan egg, ¼ teaspoon of smoked paprika, and salt and pepper to taste.
  • Spread the mustard evenly over one side of a piece of bread and then assemble the sandwich by layering the vegan ham and cheese on top of the mustard. Place the top piece of bread on top and dip both sides in the egg mixture.
  • In a skillet, heat the pan on medium-high heat and add the butter or oil when the pan is hot. When the butter is completely melted, add the sandwich to the pan and cook for approximately 2 to 3 minutes, or until the bread is golden brown and crispy. Flip the sandwich and cook the other side until it’s golden brown and crispy. To help the cheese melt, cover the pan with a lid.

Notes

NUTRITION DISCLAIMER
This sandwich needs to be coated in a true egg substitute. JUST egg is the only egg substitute that works for this. You can find it in most supermarkets in the refrigerated section.
We use classic Chao cheese for this recipe because it resembles gruyere.
