Tis the season to eat watermelon, tomatoes, and mint. As the summer heat kicks into high gear, these are the foods that I crave, because there isn’t anything more refreshing than sweet and juicy fruit, highlighted with the cool whisper of mint. Just look at this gorgeous pink, red, yellow, and green medley of juicy color. This is nature’s air conditioner.
Take one bite of this watermelon & heirloom tomato salad with mint dressing and you’re going to want to eat it for breakfast, lunch, snack time, and dinner. The first time that I served it to my family they were skeptical, because they just couldn’t imagine tomatoes and watermelon in the same dish. All it took was one fork full and they were hooked.
Tomatoes and watermelon are the perfect combination. The watermelon is sweet and the heirloom tomatoes are also sweet, but with a burst of tangy goodness. And when you smother them with the cool mint salad dressing, you get one of the most refreshing summer treats you’ll ever eat. In my opinion, ice cream doesn’t even come close to cooling you down like this fruit salad does.
If you want to blow your friends and family away with a light and flavorful summer dinner, then serve our fresh herb gemelli pasta with this watermelon & heirloom tomato salad with mint dressing, and end the meal with grilled pineapple and cinnamon coconut cream. Those three recipes will allow you to take advantage of the season’s freshest produce, and they’re all healthy and nutritious.
Farmer’s markets are bursting at the seams with fresh fruits and vegetables right now. You can buy your herbs, tomatoes, watermelon, and mint at your local market to ensure that you’re getting the freshest, locally grown, produce available. It’s also fun to get the chance to talk to the farmers. I always learn something new when I chat with the people who grow our food. For example, did you know that there are over seven hundred varieties of heirloom tomato seeds? I didn’t either, until I struck up a conversation with a tomato farmer.
Take advantage of summer’s best produce and try this delicious watermelon and tomato salad, because we’re heading into August, and before we know it…. Never mind, I can’t even go there.
