It’s hard to believe that November is nearly over and that Thanksgiving is this Thursday. Time flies when you’re having fun, and believe me, Alex and I have been having a ball running this labor of love called Veganosity.
Today is Kick-Start Monday, but it’s also the Monday before Thanksgiving, so I thought that I would put all of the recipes that we’ve created in one tidy little longish post so that you can scroll down and click on the dishes that you are interested in making for your holiday dinner. At the end of the recipes I’ve also made a list of things that I’m thankful for, and you’re in it!
Here we go!
Every (most anyway) Thanksgiving morning I run a 10K Turkey Trot with my BFF Annette. It’s a wonderful tradition and a great way to get the day started. I’m so excited about this year’s run because Alex is running with us!!! I’ve always wanted this event to be a family affair, and I’m one step closer to seeing me dreams come true. I have two more people to convince. Come on guys, step it up!
Even though we’ll all be eating more calories than usual, please don’t skip breakfast. Studies have shown that skipping breakfast can cause you to overeat later in the day, and to choose the wrong types of food. So get your day started with these.
Appetizers are a must, at least in my family they are. I mean, don’t you want to nibble on something good while you mingle around waiting for the big feast? Try these. They’re savory and light, so they won’t ruin your appetite.
Salads and Sides
Salads and sides are one of the most important part of Thanksgiving, in my opinion. I love taking a nibble of everything, and because they’re all plant based, we can!!!
Turkey is off the menu for this vegan, so I’ve come up with some delicious entrees that can take its place. No fake meat for me!
And now, for the best part of Thanksgiving, dessert! MY favorite is pumpkin pie, what’s yours?
What I’m thankful for this Thanksgiving:
Faith – If not for my faith, losing my dear father and our beloved Lab, Guinness would have been exponentially more painful.
Good health – I’m so grateful to wake up every morning feeling healthy and energized.
Love – I can’t imagine not having love in my life. It’s what keeps me motivated to be a better person.
Family (pets included) – I love them more than they’ll ever know
Friends – You make my life brighter and worthwile.
My home – It’s where I feel the safest and happiest.

Having another birthday – I turn 51 this Wednesday and I couldn’t be happier. What’s the alternative? Yep, I’m celebrating!
My memory – I lost my amazing father to Alzheimer’s this year, I know how blessed I am to be able to think clearly and remember who my family members are, and who I am.
The seasons – As I sit here typing this it’s snowing. Remind me that I’m thankful for winter in March.
