Another week gone, another weekend here – YIPPEE!!!!!
How are you going to start your weekend? I hope you’re able to take a breath and enjoy some good food and a nice glass of wine, or whatever your favorite libation may be. For me, it’s wine, so I’m looking forward to these delicious little polenta bites paired with a rich malbec. Hurry up 5:00 pm!
Alex and I have been cooking up a storm this week because we have something special coming your way next week. We reallllly hope you’ll like it. But today, we had to fit in an easy, healthy, and totally satisfying appetizer for the weekly Happy Hour post. That’s where we ran into trouble.
We have been so focused on what’s coming up, that we forgot to plan on the now. Sooooo, that meant either going to the grocery store for the tenth time today, or, using what we had, which included our imaginations. We opted for the latter, and hell yes, that was the way to go.
It’s been several months since I bought these adorable little appetizer spoons, and this recipe turned out to be the perfect one to christen them with. One bite of the creamy polenta, the sweet and crunchy carrots, the vinegary olives, and the fresh basil and tomato sent us right to the moon. It’s dreamy, yummy, and of course we couldn’t stop at just one. We skipped lunch after all, so two or three bites would be just fine. Besides, these are pretty dang healthy, no worries.
After a quick inventory of the cupboards and fridge, I had collected an assortment of ingredients that I love all by themselves, so I knew they’d be great together. Alex was focused on converting her friend Carolyn’s grandma’s apple pie recipe to vegan (it’s part of our surprise next week), so she just nodded and smiled as I threw ideas her way. Such an easy partner to work with.
My concoction resulted in this incredibly good appetizer. It’s a spoonful of happiness for happy hour. And, it only takes about 15 minutes to make, and even less time to eat. So put a smile on your face and whip some of this up for the start of a great weekend.
