The other day I had one of those crazy, where in the hell did that come from, blast from the past memories that pop into my brain out of nowhere. My boyfriend (now the hubby) and I were sitting in Chi-Chi’s – remember that place – eating Mexican pizza and drinking frozen strawberry margaritas while we played Pac-Man. There was absolutely no reason that my mind should have gone there because I was vacuuming. What does that have to do with eating, drinking, or playing old school video games? Weird how the mind works.
That recollection of how we spent the beginning of many Friday nights made me want a Mexican pizza – stat. I love spicy food, especially the south of the border kind. It’s amazing that I was able to hold out until today to make this unbelievable yumtastic pizza. But, I am known for my willpower.
My vegan, gluten free version of this spicy pizza pie is really, really good. I started with the dough. The old Chi-Chi’s crusts that I remember had a bit of cornmeal in them, so I tried to replicate it. I used Namaste Foods Gluten Free Perfect Flour Blend flour, some Bob’s Red Mill cornmeal, and nutritional yeast. It was the perfect crunchy and chewy base for the spicy sauce and the cool toppings.
The sauce is a simple tomato base with chili powder, cumin, salt, pepper, and cilantro. It has a bit of a kick to it so I put a little extra in a bowl for dipping or drizzling more on top for a super spicy pizza.
The toppings are fresh and colorful. Blackened corn and a roasted jalapeno compliment the spinach, avocado, fresh tomato, cilantro, and mango. The flavors and textures are a medley of everything that I love about Mexican food.
But what is a Mexican pizza without a margarita? Back in the day I loved me some super sugary, frozen strawberry concoction while we played a very competitive game of Pac-Man. I usually lost, but those wins were sweeter than the margarita I was sipping on.
Because we have a lot of fresh mangos in the house, I thought a mango – lime margarita would work well with the pizza, especially since I sprinkled some fresh mango on top of the pizza. It turned out better than planned. It isn’t too sweet, and it’s sooooo refreshing and creamy, like a melted creamsicle.
Well it’s time to get away from this computer and get back to some happy time, like on my patio with a slice of Mexican pizza and a mango-lime margarita. Have a wonderful weekend!
