I’m almost fifty-two years old and I’m still getting that look from my mom. You know the one. Yesterday I drove to Wisconsin to take her out to lunch to celebrate her birthday and take her to a doctor appointment, and she read yesterday’s post in front of me. Let’s just say that she didn’t approve of my language. Sorry mom. And sorry to you if you found it offensive. I was just keeping it real, being authentic, and venting to my friends.
You know what else I did? I ate a couple of these delightful vegan chocolate walnut banana bread biscuits. That took the sting away from my mother’s disapproval.
Have you ever had a banana bread biscuit? Me either. In fact, these were supposed to be banana bread cookies, but they came out of the oven so billowy and light that I couldn’t really call them cookies. They were biscuits. Bravo for accidents because this one was brilliant.
You can call these a hybrid. They’re a cross between a cookie and a muffin, and they’re perfect for breakfast or a snack. They have a nice and light texture that’s chewy like bread. And the walnuts give them a nice crunch.
They only take a few minutes to whip up and twelve minutes to bake, so they’re perfect for a weekend morning that calls for something quick, easy, and homemade.
