CHOCOLATE CHIP. PECAN. CORN. MUFFINS! Get em’ while they’re hot!!
All right, I’m just going to jump right in and get started. You need these in your life. If I could shrink myself and just jump into the bowl – and pretend like it was one of those ball pits that kids play in – and land in a sea of billowy, corny, nutty, chocolaty deliciousness, I would. I’d eat my way through to the other side and then bounce my way back, while filling my stomach with these vegan chocolate chip pecan muffins. Wheee…..
Who says vegan food isn’t good? Whoever says that hasn’t had these vegan chocolate chip pecan corn muffins, or any of the other awesome recipes on this blog. The corn meal in these muffins gives them a bit of a sturdy texture, the kind that makes you want to eat them for breakfast, and then one or two more with tea in the afternoon. I’d even go so far to say that they’re kind of like a muffin/cookie hybrid. They’re not as soft and delicate as a regular muffin, and they’re not as crisp and chewy as a cookie, they’re somewhere in between.

If you’ve been following Veganosity for a while, you know that I’m not a big fan of sweets. The sweeter the flavor, the less I like it. And that my friends, is why I adore these vegan chocolate chip pecan corn muffins. The batter is almost savory, allowing the dark chocolate chips to shine in the sweet department. And as we all know, dark chocolate isn’t that sweet, it’s just sweet enough. That’s the beauty of these muffins.
Just look at these gorgeous edible pillows of perfection. They rise up beautifully, they have a gentle sprinkle of cinnamon sugar on the top, and they are a perfect golden color. If I could tan like this I’d never get out of the sun. Can you even stand how pretty these are?
One bite and you’ll be hooked. When you sink your teeth into these slightly dense muffins you’ll get a cross between light and fluffy and a crispy corn texture. Then you’ll find the gooey melted chocolate chips and the crunchy pecans, and you won’t be able to tear yourself away from it until every last crumb is in your stomach. Just try slapping your hand away from taking that second muffin. Good luck with that!
Do you like tea in the afternoon? If you do, then you’re going to want to have one of these vegan chocolate chip pecan corn muffins to go along with it. They’re a great substitute for a scone. Actually, a scone is a great comparison to these muffins in regards to the density and texture. Maybe I should have named them vegan chocolate chip pecan corn scone muffins? No, that takes too long to say. Who wants to talk that much when you could be eating?
These muffins are the perfect Sunday morning treat. Make them with a big pot of coffee or tea and just linger with a few of them over the newspaper, or good conversation, or peaceful silence. Whatever you enjoy, these will make that time even better.
