It’s 85° and sunny outside, and that means it’s time to chill the heck out, and spend some much deserved time doing fun things. What are your favorite summer time activities? Better question…what are your favorite summertime treats?
My hands down favorite thing on a hot, lazy afternoon is a milk shake. But WAIT, I’m a vegan, so I don’t do milkshakes anymore, right? W. R. O. N. G!
Vegans can have just as much fun as the rest of the population, and I do shakes one step better, one step healthier (it’s all relative my friends), and two steps, ooohhh, that’s sooooo good.
As a matter of fact, MY milkshake brings all the boys to the yard. Seriously, it does, it brings my two furry boys, who stick to my legs like glue as I’m carrying my shake out to my sunshine filled patio. They don’t have me fooled, I know that they are just waiting hoping for me to trip over them so that the creamy, delicious concoction that I was carrying spills all over the floor so that they can clean it up.
Back to this sweet, icy, fruity, chocolaty blended slice of heaven. It’s so easy you might just find yourself making one every day. No worries, it’s just fruit and coconut milk, and a little chocolate. You deserve it!
All you need is a strong blender (I love my Blendtec), that’s it! Slice a couple of ripe bananas, put them in a freezer bag, and freeze them. Then……pit a dozen or so Bing cherries, melt some vegan chocolate chips, and scoop out some coconut milk. Blend, pour, and sip through a straw – to avoid a mustache.
A trick I learned from my hubby. Use a strong plastic straw to pit the cherries.
Summer is fruit season. I LOVE cherries, mangos, peaches, plums, and berries. You could seriously make a different flavor every day of the week. All you need is some creativity and an appetite. - 2 frozen bananas – sliced
- ¼ cup of cherries – pitted
- 3 tablespoons of whole coconut milk
- 3 tablespoons of melted vegan chocolate chips
- Add the bananas to a strong blender and blend until creamy. You may have to stop and readjust the bananas if it gets stuck. Add the cherries, chocolate, and coconut milk and blend until combined.
