Are you a smoothie lover? Me too! They’re healthy, filling, and portable. What could be better? But what if you want to take a break from portable? What if you want to just sit, and read, and relax in the morning – without a straw in your mouth? Well, then you make a smoothie bowl.
This morning I felt like spooning my breakfast. I wanted to ditch my favorite smoothie glass and replace it with a pretty bowl and my favorite spoon. I wanted to chew my food, so I made a vegan berry banana smoothie bowl. It was the perfect compromise.
The fabulous thing about these bowls is that you can still have a smoothie, but you get to top it with all kinds of goodies and dig in with a spoon. It’s so thick and creamy that you'll feel like you’re eating ice cream for breakfast. You might start to feel slightly guilty about that, until you remember that the smoothie is filled with blueberries, pineapple, banana, spinach, carrots, almond milk, and chia seeds.
As if those ingredients weren’t fabulous enough, you get to top it (like a sundae) with plump and juicy blackberries, salted almonds, coconut, and banana slices. GOOD morning!
Let’s talk about the spinach, carrots, and chia seeds that are the hidden gems in this vegan berry banana smoothie. There’s a whole cup of baby spinach leaves in this frozen treat, and, a half of a cup of chopped carrots, and two tablespoons of chia seeds! And guess what? They are invisible, untraceable, and your kids will never know they’re there.
How cool is that? You can sit back and smile while your munchkins devour their healthy morning “dessert,” because they don’t know that you just got them to eat their vegetables. And the grand prize is that they'll think you’re the best mom ever for letting them eat something that awesome for breakfast. On a school day! You rock mom. You. Rock.
To make this sweet (did I mention that there isn’t any added sugar) bowl of frozen bliss you’re going to need a powerful blender; because you blend it up thick and creamy, which means minimal liquid. My favorite blender, the one I use is a Blendtec (affiliate). It makes everything from juice, to soup, to smoothies in a flash. Always put the liquid in first, then the least solid ingredients. It’s kind of like building a reverse pyramid, light on the bottom and heavy on top. I find that that helps the blender to work better.

Ingredients
- 1/2 cup of unsweetened almond milk
- 1 cup of baby spinach leaves
- 2 tablespoons of chia seeds
- 1 cup of frozen blueberries
- 1 cup of frozen pineapple
- 1/2 cup of chopped carrots
- 1 banana – half sliced to put on top of the smoothie
- 10 salted almonds crushed
- 1/4 cup of blackberries
- 2 tablespoons of unsweetened coconut flakes
Instructions
- Put the almond milk, spinach, chia seeds, blueberries, pineapple, carrots, and half of the banana in a blender and blend until thick and creamy. Add more milk if needed. Put the smoothie into a bowl and top with the blackberries, almonds, sliced banana, and coconut.
