Summer has kicked into high gear around my house. The husband and I have already played two USTA summer league tennis matches, my son and I have gone kayaking, Alex and I have walked the dogs along the lakefront and dined al fresco a few times, and my sleep has been interrupted because the hubby and I have begun our annual A/C war. He likes it cool and I like it cold. Guess who’s going to win this one?
The warm temperatures, sunny days, and balmy evenings are a great excuse to pack a picnic and get out and enjoy nature, or an outdoor concert, and quiet time. It’s time to relax.
Picnic meals shouldn’t be stressful to prepare. They should be easy to pack and carry, and the food should be able to stay fresh without refrigeration.
To make your summer picnic easy and carefree, here are three picnic basket ideas that will help you get out and chill with your family and friends this weekend. Enjoy!
All American Picnic
Begin your leisurely outdoor feast with watermelon slices because nothing says summer in the U.S.A. like a sweet and juicy piece of watermelon. A summer sandwich with smoky bacon olive oil, Greg’s lemon and dill potato salad, and and a serving of Napa cabbage salad with toasted almonds round out this delicious picnic meal. Finish it with vegan dark chocolate chip cookies.
Asian Inspired Picnic
Who doesn’t like the delicious flavors of Asia? Bring them with you and enjoy them on a blanket under the sky. Start with some delicious vegetable sushi rolls, then enjoy a lovely bowl of soba noodles with roasted tomatoes and kale, maybe some barbecue tofu, and then some carrot cake energy bites for dessert.
Mexican Inspired Picnic
Bring the heat to the party. Start your picnic with a watermelon and tomatillo salsa salad, and a spicy three bean salad, then move on to a flavorful vegan Mexican pizza, and then sink your teeth into an outrageously good chocolate coconut cupcake.
Enjoy your weekend and try and get outside and just be one with nature and good food.
