Spinach, Apple, and Pecan Salad and Avocado Dressing
Sometimes my body screams for a fresh and healthy salad. Today was one of those days. The craving began while I was running, and it escalated until I could finally get into my kitchen and start foraging for the ingredients. This recipe is inspired by fall. The trees are beginning to change color, the leaves are falling, and my yard is a kaleidoscope of purple, green, orange, and brown right now. Those colors, and the crisp smell of the air, pretty much directed me to make this.
It’s apple season, and the supermarket is finally filled with sweet, crunchy apples. None of those soft, mealy summertime things that try and pass as apples. I happen to love apples. There are few things as wonderful as biting into a nice, crisp apple. Am I right? It’s one of the perfect fruits to accompany a fall salad.

The dressing is also something special. The creamy, tangy, and all around cozy avocado cider dressing envelops the veggies and apple slices; and, it tastes like it should be bad for you, because it’s so much like a one of those dressings that are filled with cream or cheese. But it’s not bad for you, so you can eat as much as you want. That’s my kind of dressing!!
Make this a meal or serve it as a side. It works both ways. I’m eating it for lunch, and I’m on my second serving. Ahhh, the joy of eating plants, you can indulge without feeling guilty.
