Review of Dining At The Ravens and their Chocolate Ganache Tart

Now imagine walking through heavenly gardens filled with organic vegetables and herbs. As you walk and your hunger awakens, you decide it’s time to eat breakfast. Fortunately for you, The Ravens is within steps of the gardens. You find a seat at a table with a view and scan the menu. Trying to decide what to order is the most difficult part of your day.
Should you order the frittata and quiche, the Stanford Portobello and Florentine, or the garden scramble? Good luck deciding, because everything on the menu sounds delectable.
That entire scenario sounds like a dream, doesn’t it? It’s not, this magical place is real. The Stanford Inn and The Ravens restaurant is a little slice of vegan paradise located on the Mendocino coast in California.
The Stanford Inn, founded by Jeff and Joan Stanford, is the only vegan resort in the United States. The AAA four diamond resort is eco-friendly and dedicated to sustainable living. There’s a farm on the property that houses llamas, horses, swans, and rescued dogs and cats, a working organic farm, and The Ravens restaurant.
Dining At The Ravens cookbook is a gift. In it you will find over one hundred and fifty vegan recipes, as well as a little bit of history about how the Stanford Inn came to be.
The book begins with the story behind the resort, restaurant, and farm. Jeff and Joan Stanford describe the philosophy of the cookbook, tips for cooking success, and my favorite part; The Best Thing about Serving Vegan Cuisine to Non-Vegans by Sid Garza-Hillman, the resort’s nutritionist.
The recipes speak for themselves. All are plant based, and all of them look delicious.
There are nine breakfast recipes, such as the three that I mentioned above.
If you’re looking for breads or baked goods recipes, you’ll find eight in this book. I can’t wait to try the Sourdough Baguettes and The Stanford Inn by the Sea Famous Scones.
There are twenty-five sauces, dips, and spreads that you can pair with the bread recipes. Doesn’t a Cashew Morel Cream, or a Kalamata Olive Pâté sound fabulous?
If you’re looking for appetizers, Black-Eyed Pea Cakes, African Rolls with Sweet Potato Coulis, or Tamari-Maple-Glazed Tofu are just three of sixteen mouthwatering recipes that you can choose from.
Of course there are salad and dressing recipes, soups, and incredible entrée recipes. The most intriguing entrée recipes in my opinion are the Ravens Sea Palm Strudel or the Beggar’s Purse.
Then there are the desserts. Eleven tempting and gorgeous desserts. If you’re looking for something simple, try the Basic Sorbet. If you want a classic, make their Carrot Cake. Or, if you’re craving chocolate, like I was when I read this book, you have to make their Chocolate Ganache Tart.
This tart is fairly simple to make, and oh boy is it rich. A sliver of a slice is all you’ll need to fix that chocolate craving.
This ganache recipe is so decadent and delicious. There is a little mint extract in the recipe to make this chocolate tart pop. The hazelnut and almond crust is slightly crunchy and adds the perfect texture to the creamy filling.
I dusted some cacao powder on top and added some chopped nuts and raspberries to make it even prettier. It was the perfect Valentine’s Day dessert. I’ll definitely make this again, especially during the holidays.
I hope you’ll purchase Dining At The Ravens and try all of their recipes. I’m going to make the Tamari-Maple-Glazed Tofu for dinner tonight and serve it with roasted vegetables. For dessert, a slice of the Chocolate Ganache Tart. One tart goes a long way for two people.
