Sometimes you wake up and you just crave a healthy breakfast. That was me this morning. I’ve been super strict recently with my diet and trying to make every time I eat something worth it. Fitting in adequate amounts of protein, veggies, fruits, and whole grains is extremely important. That is why this morning I’m bringing you guys an extremely healthy and amazingly delicious breakfast!
The quinoa in this dish is what brings the protein. Quinoa, for those of you who don’t know, is a complete protein and it’s fabulous. It’s a seed that cooks exactly like a grain, so it’s the perfect replacer for oatmeal. Raspberries are amazing for you too! They’re high in fiber and antioxidants, plus they’re diet friendly (super low cal). The coconut shreds add a little extra sweetness and crunch (you could toast them to add a little more flavor).
