After a long night of no sleep (thanks to the horror movie Descent), I needed to recharge and get my energy back! It’s Sunday Runday, and I really had to get my carbs in and energize. The solution? I made some delicious, healthy vegan pancakes. Instead of strictly using flour, I opted for some ground oats and whole grain flour. Complex carbohydrates are key in keeping insulin spikes to a minimum while increasing your energy reserves.
So what makes this recipe “healthy?” I replaced the sugar with Stevia, a plant derived sweetener that has been used to sweeten foods in South America for centuries. I also used oats and whole grain flour instead of white flour. This complex carbohydrate pancake is so much better than the typical simple carb cakes I used to eat. Those two simple changes drop the calorie count significantly and help your body avoid a big surge of blood sugar during digestion. But don’t let the healthier version fool you, because these taste ridiculously good. Good for you can taste good too.
