I should have shared this recipe with you thirty minutes ago, but I was too busy pushing handfuls of this savory and crunchy rosemary/black pepper popcorn into my mouth. Even my dogs where looking at me like I was another mother; because their mom would never be such a chow hound. I’ve got them fooled!
As you all know, it’s FRIDAY!!!! Woot-woot, raise your hands in celebration. And if you follow this blog, you know that Friday is Happy Hour time! Woot-woot, keep on raising those hands.
Did you have a long week too? Mine was insane. I need me some happy time – an hour may not be enough. Actually, my week was happy, just really busy. I got to see my mom and my bro in Wisconsin, I got to run with Alex along the lakefront in Chicago (her new hometown); although it felt like freaking winter! It’s been in the low 50’s here for the past few days. Mother Nature needs to knock off the practical jokes. And, I won my first winter league tennis match, so yes, all good things. But seriously, could we add a few extra hours to the day?
Because I was strapped for time this week, I needed something super simple to share with you for today’s post. And as luck should have it, I was browsing one of my favorite blogs, Hello Little Home, and Ginnie (the blog’s awesome author) had just posted her favorite popcorn! Bazinga!!! It hit me, I hadn’t shared my most amazing olive oil, rosemary, and black pepper popcorn recipe with you.
You are going to love this! Actually, I must give props to my darling, handsome husband for thinking this one up, because he is the popcorn master in this crib. When Alex and I became vegans we were like, hmmmm…..what can we do to make our popcorn all buttery and yummy? He didn’t want to use vegan butter (don’t ask), so he suggested olive oil. Why not? Then he ramped it up with some freshly minced rosemary and freshly ground black pepper. He’s brilliant.
This is truly a gourmet kind of popcorn. It smells like none other, and it tastes just as good. I feel like I should be limiting myself when I eat it because it’s so decadent. But, it’s not. The popcorn is air popped, olive oil is a healthy fat – we need fat people – and rosemary has antioxidants. So eat up!!!

Like I said before, it feels like late fall today, so I thought that a hard apple cider was the perfect beverage to serve with this gourmet treat. Sweet apples, salty popcorn, oh yeah.
Make this for a quick snack, for movie night, or for the next big game. I’ll be eating more of this incredible popcorn while watching college ball tomorrow, and the bigger boys on Sunday. GO HAWKEYES, ROLL TIDE, and GO BEARS!!!!!!!
