Mango nectarine salad with raspberry dressing is what summer eating is all about. If you want to take a taste of the sun, and the warm air, and the freedom that is summer, you have to try this salad.
Have you ever grown your own lettuce, red cabbage, cilantro, or basil? If you have, then you know that there isn’t anything better. The only thing that compares is buying from your local farmers market. Do you agree?
This is the first time that I’ve grown vegetables other than tomatoes (I know, they’re fruit) and herbs. My fabulous husband and son built me two raised beds so that I could try my hand at backyard farming, and I’m over the moon with the results. I have giant heads of fancy red and green lettuce and red cabbage. The eggplant, zucchini, cucumbers, and the many types of peppers that I planted are beginning to flower. And, the tomatillos and tomatoes are ready to be staked so they stay upright. My herbs are also doing well. I have an assortment of oregano and basil, rosemary, cilantro, sage, tarragon, and thyme.
Yesterday I went out to my little garden of Linda and picked some lettuce, cabbage, basil, and cilantro, and I made myself the freshest salad I’ve ever had. For real, it almost brought tears to my eyes it was so good. That, and the fact that I grew the greens that built the salad.
The sweet tropical mango and the perfectly ripe nectarines helped take the salad over the top, and the bright and gorgeous raspberry dressing was the icing on the cake.
That dressing. Seriously. It didn’t have any oil in it, it didn’t need any. I squeezed the juice from a lemon into my Blendtec Blender and then I added plump and juicy raspberries, fresh cilantro and basil from my garden (I can’t stop saying that—from my garden), a pinch of salt, and some water, and I blended it into the most delicious summer salad dressing ever.
The smells of that salad alone made my mouth water. Can you imagine the aroma of freshly picked cilantro and basil, ripe nectarine, mango, lemon, and raspberries?! Even my little dogs where circling my feet with their noses in the air.
That mango nectarine salad with raspberry dressing was a visual feast, an olfactory feast, and a flavor sensation. And the fact that I had to wait to eat it because I had to photograph it so I could share it with you was a huge lesson in will power. Do you see how much I love you my dear friends?
When I finally finished taking the pictures I took that plate of gorgeousness out to my patio table and took a bite. If you could imagine what it would be like to have fireworks go off in your mouth, that’s what this salad tasted like. The excitement of the tender lettuce, the crunchy cabbage, the sweet mango and nectarine, and the tangy raspberry dressing with the cilantro and basil was exciting! I feel weird saying that because I don’t usually get that worked up about food, but this was different.
Maybe it was because most of the ingredients were fresh picked from my garden? Maybe it was the summer fruit that was ripened to perfection? Maybe it was the tangy, sweet, herb filled dressing? Silly me, it was all of those things mixed together that created one of the best salads I’ve had to date.
Oh, and I don’t want to forget the crunchiness of the pepita seeds and the tropical goodness of the coconut. Both of those added another element of texture and taste to the salad, as well as protein and nutrients that gave me the energy I needed to win my USTA singles tennis match later in the day. Oh yeah!
