Are you in the mood for something sweet, savory, tart, and crunchy? Then you have to try this crazy good lemon basil cashew cheese bruschetta with blueberries. This is a recipe that satisfies all of your cravings at once.
Let’s start with the cashew cheese. Soak your nuts for 30 minutes, drain the water, and then grind them in a food processor with the lemon, basil, salt, and pepper. Voila! You’re done. How easy is that? In a few minutes you can turn nuts into a cheesy, yummy, crowd pleasing spread.
Paint some olive oil on thin slices of crusty bread and toast in the oven until they’re golden. Once they’re cool, spread the cashew dip on them and sprinkle the blueberries over them.
Now take a bite………oooohhhhh, so good. This is my newest vegan obsession. I love it so much, and the best part about it is that it’s actually healthy. It’s full of protein, nutrients, antioxidants, and yum. What more could you want in a snack?
You could serve this as an appetizer for a brunch, a lunch, or dinner. Or, make it for your kid’s school lunch. If you pack the toast, the spread, and the blueberries separately they would have fun putting it all together. It’s would be like a lunch art project!
Alex and I are eating this for lunch today because it’s Kick-Start Monday, and, because she graduated this weekend and we’re exhausted. With graduation came a lot of celebrating. Of course! It also meant that we got to move her back home for the summer, yeah!!!!
As wonderful as it is to have her home, we had to move tons of boxes and furniture down four flights of stairs, then back up again for more boxes. You get the picture. It was a grueling day that didn’t end until 11:00 pm. But no complaints here, this mama is happy to have her daughter, and Veganosity partner, under the same roof. Plus, we must have burned one thousand calories while building up our quads, hamstrings, and biceps. We’ll take it!
