Do you have a veggie-hater in your midst? I used to have one too. When my boyfriend and I moved into apartments, we began cooking dinner together every night. It was fantastic and I love having him in the kitchen with me, but he used to ask for potatoes (or some other kind of starchy veggie) every night! I kept complying with his potato requests for a while until I decided enough was enough. He came home to these carrots and initially turned his nose up at them, now they’re his favorite side dish!
These carrots are roasted with garlic and coconut oil (which adds some awesome flavor and has added healthy benefits) and taste amazing… although nothing can possibly taste bad if there’s garlic right? Oh, and they’re super simple to make. You won’t spend hours in the kitchen slaving over these. They’re perfect for the time crunched mom, student, worker bee, and just about anyone else.
