How are you doing? Did you survive the July 4th weekend? Did you have a BLAST? How about eating? Did you eat a ton of things that are making you feel like you shouldn’t have? Yep, us too. It happens.
We had a fabulous, long, weekend. We went to lots of parties, ate lots of food, and drank more wine than we should have. It’s all good though, because sometimes you just have to allow yourself to relax, enjoy, and indulge.
Because it’s Kick Start Monday, and we’re guessing that you all need to get back on track –we certainly do – we thought you’d appreciate an easy recipe that is packed with superfoods, protein, and amazing taste. Sound good? Well then let’s get to it.
The other day we were strolling through Whole Foods and we saw bags filled with the strangest, biggest pea pod type things. When we realized they were fava beans we immediately knew we had to try them. But not with a nice Chianti, noooooo, we will not go in the Hannibal Lecter direction. Besides, we are wined out for at least a week.
We thought that they would be fantastic in a fresh, healthy salad. Something with protein, lots of color, and crazy good flavor. We nailed it. Not to be all braggy or anything, but this is a seriously good salad that is perfect for the main course of a rockin’ summer meal.
While we prepped the beans we cooked some quinoa. It’s the perfect grain to add to salads because it turns simple veggies into a true meal. It is also a fabulous source of protein – 8 grams in one cup.
Here’s something you should know about quinoa – DON”T skip the rinsing part. Quinoa can taste über bitter if you don’t rinse it well. As long as you do that, you’re going to love it!
There was some kale in our fridge, just begging to be part of this dish, along with some blueberries, a tomato, and some Napa cabbage. See, we told you this recipe was filled with superfoods. Can’t you just feel how good your body is going to feel after eating all of these antioxidants?
We really wanted to dress it up with something savory, and a little smoky so we did some experimenting until we got the mixture just right. We started with the basics – champagne vinegar, salt, pepper, and olive oil. Then the magic happened. We added unsweetened cranberry juice and smoked paprika. What?! Sounds a little freaky deaky, right? We thought so as well, but we were feeling adventurous, and it worked out. This dressing is really, really, good.
The tartness of the cranberry juice, and the smoky flavor of the paprika add a subtle punch to the fava beans, and they boost the sweetness of the blueberries. This is one of our new favorite dressings.
Now that we’re past the biggest weekend of summer, it’s time to make sure that we enjoy every single minute of every single day. Summer goes too fast, especially once we get settled into July. So make this salad, take it outside, and eat it while you enjoy the sunshine, the sunset, or the stars and the moon.
