Now that you know how excited I am about introducing you to Better Bean let’s talk about this fantastic Cuban black bean dip with roasted corn, apples & kale that I made to snack on while we watched the Presidential Debate on Tuesday night.
When I opened the tub of Better Bean Cuban black beans and took a bite I knew exactly what I wanted to make with them. The latin flavors danced on my tongue and all I could think of was party food.
I wanted to add a little sweetness to complement the spiciness of the beans, so I dipped an apple slice in the beans and took a bite. Delicious! I knew that some dry roasted and blackened corn would go well with the beans, and to add a dose of superfood power, and another texture, I chopped up some red kale to mix in to the dip. Then I spied some green onions in my fridge and thought, why not?
This Cuban black bean dip with roasted corn, apples & kale went over well with my husband. He seriously ate the entire bowl. I only got a few scoops. The good news is, it only took me fifteen minutes to whip up another batch.
All you’ll need to do to make this dip is roast some corn and chop an apple, kale, and green onion. Mix them with the ready-made Better Bean Cuban black beans and you’ll have a delicious bean dip that your friends and family are going to be requesting every time you get together.
If you’re in a hurry, or you aren’t one to make your own beans, I highly recommend buying Better Bean beans. They’re not like the typical canned beans that you’ll find sitting on your grocers’ shelves. These are fresh, homemade beans that you can feel good about eating.

CUBAN BLACK BEAN DIP WITH ROASTED CORN, APPLES & KALE
Ingredients
- 1 14 ounce tub of Better Beans Cuban black beans
- 2 cups of frozen corn
- 1 medium apple – cored and finely chopped
- 3 green onions – finely chopped
- 2 cups of finely chopped red kale you can use any type of kale
- Squeeze of lime juice from 1/2 of a lime
Instructions
- Dry roast the corn in an iron skillet on medium high heat until it begins to brown. Remove from heat and let cool.
- n a large bowl mix the beans, corn, apple, green onions, kale, and lime juice. Mix well.
- Enjoy!
