What do you do when you have an extra store bought pizza crust and you can’t, won’t, or shouldn’t make a third vegan pizza in one weekend?
Make an apple pie with candied walnuts pizza! Obviously. Isn’t that what everyone does? 🙂
Last Friday my non vegan friends (the only close vegan friend I have is my daughter?) and I got together for a happy hour. That gave me the perfect opportunity to show them how delicious a cashew mozzarella pizza margherita can be. Check out this for the cheese recipe. I also made a spinach and artichoke dip recipe that I got from a popular vegan blog, which to be honest, didn’t live up to my expectations (that’s why I’m not going to share that blog’s name), so I’m going to play around with that recipe and see if I can get it to my liking. Anyway, my friends loved the pizza! Maybe, if I keep feeding them, I’ll have at least one non-family member vegan friend some day? Joyce? Lynette? Laura?
After happy hour I came home and made another vegan pizza margherita for my darling husband, but I made the crust from scratch for ours. Long story short, I made the dough too late, it wouldn’t rise in time for happy hour, so I had to go to Whole Foods and buy a ready-made crust, which came in a package of two. Hence, I had a third pizza crust to make in one short weekend, which resulted in this…
A sweet, cinnamon and nutmeg apple pie pizza topped with candied walnuts. Oh my goodness! Never was a dessert as easy and delicious as this. Okay, well, maybe that’s an exaggeration, but it was really easy and so, so good. The hubby and I even had it for breakfast on Monday. Yum!
All you need to do to make this apple pie pizza dessert is peel and slice five large apples and cook them in a pot with some brown sugar, cinnamon, nutmeg, and a little orange juice. When they’re soft and tender they’re ready to go on the pizza crust. While the apples are cooking, you can coat the walnuts with a little maple syrup and some cinnamon. Sprinkle them on the apple pizza and pop it in the oven for 10-15 minutes. Bam! You’ve got yourself a delicious, kind of healthy, fun dessert. My kids would have loved this when they were little. Actually, they’d love it now, but they probably wouldn’t show their excitement the way they would have when they were midgets. Gosh I miss those days….
